Cups To Grams Conversion Chart (And Why I Use Grams)

Grams and ounces are metric units of mass (weight) to measure ingredients with precision.

That means that they’re more accurate than units of volume (i.e. cups, tablespoons & teaspoons) because it doesn’t take into account different densities, like how tightly ingredients are packed into a cup or the shape of chopped ingredients, for example. That’s why professional chefs use mass measurements for consistency in the flavor & look each time a recipe is prepared. To measure with grams or ounces, you need a kitchen scale to weigh the food.

Units of mass are more accurate than units of volume

That’s why all my recipes are based on grams. If you prefer to measure in American units of volume (i.e. cups, tablespoons & teaspoons), you’ll find the most important ingredients converted below. As mentioned, volume-to-mass conversions are not absolute and each conversion is based on my experience.

When it comes to measuring ingredients by volume, it’s better to use them for fluid ounces because they are always the same. To begin converting fluid ounces, you should know that the volume of 1 milliliter (mL) of pure water at temperature 4 °C = 1 gram (g). Meaning:  1 milliliter = 1 gram.

1 US cup (c) of water = 240 milliliters (mL) or 240 grams (g).
Note: 1 US cup (c) of water = 236.588237 mL and is rounded to precisely 240 mL by US federal regulations (FDA) for food labeling purposes and is standard practice for conversions.

1 US cup (c) of water = 16 US tablespoons (tbsp) or 48 US teaspoon (tsp) or 8 US fluid ounce (fl oz)

  6. Hi. I 100% agree with you about how much better and more accurate using the metric system is versus the U.S.A. cups system! The American one is so flawed, inaccurate, and unreliable; I can’t understand why they haven’t changed over to the metric system! I am an American who moved to Italy. I brought my cups with me and was frustratingly trying to continue using them. After a few years of learning and baking a lot; spending hours on the computer trying to convert recipe measurements, and trying testing the conversions with my kitchen scale over and over again, I came to realize HOW MUCH BETTER, EASIER, AND MORE RELIABLE the metric system was, as well as baked goods coming out SO MUCH BETTER! Unbelievable how bad American recipes are, and all the various problems that result mostly from the horribly unreliable cups measuring system they have obliged us to learn and use!!!

    On another note, would you happen to have the same kind of conversion chart in regards to fruits and vegetables, frozen and fresh? I could really use a reliable one that can convert many wonderful American recipe sites- that still ONLY come in cups! The numbers are so widely varied when I try to look them up on the internet, and I would much rather trust your numbers!
