Homemade Mayonnaise

1 large egg yolk
10 g dijon mustard
180 ml grapeseed oil
10 ml lemon juice
1 pinch of salt
1 pinch of white pepper


  1. In a bowl, add the egg yolk and mustard with salt and pepper and whisk at medium speed.
  2. While continuing to whisk, gradually add the oil until the mixture becomes thick.
  3. Then, incorporate the lemon to set the texture and finish off the taste.
